This one's for Kent

I have made so many different types of pancakes, most of the them are from scratch. But there I was in this  store, that I haven't been in for years and what did I see??? A box of pancake mix that I remember from my youth. I don't buy mixes anymore as they taste like cardboard. But for nostalgic reasons, I bought the box and made some up today. Yep, they were as good as when dad made them! Light and fluffy! So these are for my brother, Kent. Enjoy!!!

Something Different

I thought it might be fun to go through my old high school yearbooks and blog some fun things that I went to. I am doing this mostly for my children, to give them a part of me when I was a lot younger.  I will be posting pictures from my yearbooks and my personal scrapbook of those years. So here goes!
Here is the cover of my freshman year: 1965-1966. I think this was the best yearbook cover of the 4 years I went to AZUSA HIGH!

This is me as a freshman. I had a good year and was glad to belong to Pep Club, Girls Glee Choir and GAA (Girls Athletic Association).





This picture and the next are from inside cover. These two pictures are showing some of the groups or clubs one could be in at Azusa High.







The first pep rally we attended as Freshman was noisy.When that big drum came out wow! We had I think the best pep rally's They got everyone excited for the games! We had great football and basketball games that year.





The first homecoming game and dance. I wore my 8th grade graduation dress. Semi-formal and a short dress, in pink with white lace over the pink satin. It was the style in those years to wear your hair up and I had lots.

After school Janet surprised me by asking me to go the homemaking room and pick up a corsage that Jim bought me. I went to the game in a new yellow and orange flower outfit.  And then back home after the game to change into the dress for the dance. After the dance, Janet and her date Robert and Jim and I went to Coffee Dans for eats. I remember that I got a BLT and Robert got a steak, whatever leftovers we had, Robert was glad to eat.  There were many great times that the four of us went out on double dates.

Tragedies

This is something that I don't write on, as most are personal to me in my own way. As the different tragedies do happen around the world or at home in the United States, what I feel I can't explain. My heart aches, I cry and then I pray for all those who are in need of comfort. I believe that God does hear each of our prayers and I hope that other people feel the spirit of those prayers. To let others know of our heart felt feelings through the prayer of each day. May God give comfort to those who have loss a great deal, I love you and pray for you.

Shake and Eggs

Got up this morning thinking I would cook up some pancakes and then did a yogurt fruit shake and some of the salsa eggs. I like making all kinds for fruit shakes, some with fruit juices and fresh fruits, some with home-made yogurt and fruit. If I need to add a sweetener I usually use Agave Nectar. They are filling by themselves, but today I just felt like salsa eggs.  For salsa eggs, I had some home-made salsa, added the eggs, shredded carrot, red bell pepper, salt and pepper to taste.

Years back when I first lived in Glendora, CA my neighbors made these eggs. Rae and Linda lived in a duplex next to us. Rae was the mom and retired, lived in the front duplex.
Linda, a school teacher was the daughter lived in the back one.  Good neighbors. Anyway, Linda got me started making these type of eggs, back then it was made with cottage cheese, chilies, ketchup, tomato sauce, shredded carrots, cheddar cheese, green onions, salt, pepper, Lawrys seasoned salt. Sometimes, if I have all the ingredients, I still make them that way, just don't add the ketchup anymore. Also I don't add the cheese until nearly done cooking, this way they are not as watery. I suppose you can make them most anyway, as long as you use some sort of tomato, or salsa, or sauce. Add what fresh veggies you want and season to your taste. They are right filling!
Now back to Rae and Linda. They use to live in Whittier, but when Rae's husband died they had this duplex and decided to sell their home and move into the duplex. Linda still worked in the Whittier schools, until she retired. Linda married while in Glendora, but it didn't last too long. We were all good neighbors and really they became like family to me. Rae's sister and father were also living close by. Rae's father and mother were born in Italy, so Rae did a lot of Italian cooking. My oldest daughter and I can still remember the smell of garlic when we walked into Rae's home. They loved when Cynthia was born (1971) and enjoy seeing her every chance they got. It was interesting that after I had moved to TX and then back to CA, got divorced (now with two daughters) and found out that little duplex was for rent (1979).  So the girls and I move back there and lived there for six years. Fun times! If I find a picture of that place I will add it to this post.
Everytime I make salsa eggs, I have a good memory of my friends, Rae and Linda.
